Lemon Poppy Seed Cookies
These cookies are the ones that always surprise people. When I make these people either seem to be a little apprehensive or really excited. But I never come home with leftovers!
I love the flavor of lemon. If I can add lemon to something and it will still taste good I totally will. I found these cookies when I was looking for a lemon-flavored dessert that wasn't cake. These cookies have the perfect hint of lemon that makes them great for what I am looking for. Another great part of these cookies is that you don't have to put the glaze on the top. If you want to keep them more sweet, keep the glaze off, if you want them more sour put the glaze on.
I really like to make these cookies in the summer. They just seem like fresh and fruity cookies that are perfect for picnics or parties. But you can make these any time of the year.
The recipe calls for specific amounts of lemon juice and lemon zest but I usually just use 1 whole lemon. So the zest of one large lemon and then use the juice from that same lemon to make the glaze. This way I'm not zesting extra lemons and I know that I am putting about the same amount in each batch that I make.
These cookies also taste delicious unglazed. Sometimes the glaze can be too sour or too sticky for some people. If that is the case, or you just don't have the extra time to cool the cookies and then wait for the glaze to set just eat them as they are! While the glaze enhances the lemon flavor they have enough flavor from the zest to still taste like lemon poppy seed cookie

Preheat the oven to 350° F.

Mix butter and guar in a large bowl until creamy.

Add egg and lemon peel and mix well.

Add flour and baking soda to the mixture. Mix until combined.

Mix in the poppy seeds.

Drop large teaspoon-sized dough balls onto cookie sheets about 2 inches apart.

Bake for 11-12 minutes. Let the cookies cool on the cookie sheet for about a minute and then transfer to a wire cooling rack.

While the cookies cool, combine powdered sugar and lemon juice to make the glaze.

When the cookies are completely cool, drizzle the glaze over top. Allow about 20 minutes for the glaze to set completely.
